Anova immersion circulator: weekly steak notes for Precision Cooker 3.0 buyers
I use my gifted Anova immersion circulator for 130–134°F steak: two hours sous vide, then a quick sear, with less hands-on effort.
When we moved into our new home, our friends @🐣会飞的小鸡腿🐥 gave us an Anova immersion circulator. Our friends know Mr. Mao and me so well; it was another gift that really touched our hearts. Once I started using it, I couldn’t stop!
Sous-vide steak compared with traditional pan-searing
Less moisture loss.
More nutrients and flavor retained.
It is less likely to become overcooked or burned.
You can choose to use less oil.
Equipment (the brands I use and possible alternatives)
I use an Anova immersion circulator; it was a gift from friends.
For a large water container, anything will do.
Vacuum sealer and bags: Zwilling official website.
Steak board: Bambusi from Macy’s. The experience was excellent.
Steak plates and red-wine glasses: Villeroy & Boch from Macy’s.
DEALMOON is worth watching for deals! From before we moved until now, I have found almost all our discounts there. This time, the prices for all the Macy’s equipment were especially good.
Cooking steps
- Set the immersion circulator to 130–134°F (about 55°C) and start heating the water. It feels about as fast as a gas stove?
- Season the steak with salt and black pepper.
- Put it into a vacuum bag with rosemary; butter is optional. If you use a regular bag, you can refer to Xiaogaojie’s video and use water displacement to seal it.
- Cook it in the low-temperature water bath for two hours.
- Give it a quick sear, just until it is browned.
Overall, sous-vide steak is a substantial dish that takes time but not much effort. Mr. Mao and I normally eat steak every week, and sous vide adds an extra sense of occasion.
I hope you have a good appetite too!

What the owner actually tested
The owner used an Anova immersion circulator for a home steak dinner, setting the bath to 130–134°F (about 55°C), cooking for two hours, and finishing with a brief sear. She describes the routine as time-consuming but not labor-intensive and says she and Mr. Mao make steak weekly.
Her stated advantages—less moisture loss, more retained flavor and nutrients, less risk of overcooking or burning, and the option to use less oil—are her conclusions from the post, not independent test results. The post does not report a measured moisture comparison or a controlled traditional-searing comparison.
Equipment and workflow
The owner’s setup includes a large water container, a vacuum sealer and bags, and a pan for the finishing sear. She says any large container will do, seasons with salt and black pepper, adds rosemary and optional butter to the bag, and notes a water-displacement method for sealing a regular bag.
This workflow changes the cooking task rather than removing it: the circulator handles the two-hour water bath, but the steak still needs a final sear for browning. Buyers should also allow for a suitable container, bagging method and separate searing pan.
Choosing a regional Anova model
For the US, Anova’s Precision Cooker 3.0 is officially listed with 1100 W, dual-band Wi-Fi, a two-line touchscreen and manual time and temperature control. For the UK, the official page lists 1100 W, dual-band Wi-Fi and controls on the cooker. These are regional Precision Cooker 3.0 specifications, not confirmed specifications of the owner’s gifted unit.
The UK product page describes attaching the cooker to a pot, placing food in a sealed bag, cooking through the cooker controls or app, and searing afterward. Because the owner’s generation and electrical version are unknown, confirm the local model and electrical compatibility before treating her experience as a direct review of a current regional product.
How to interpret the 130–134°F, two-hour recipe
The owner’s recorded recipe uses 130–134°F, about 55°C, for two hours, but she does not provide the steak’s thickness. Anova’s steak guidance selects temperature by desired doneness and cooking time by cut and thickness, so this routine should be treated as the owner’s specific recipe rather than universal timing or a safety guarantee.

The practical trade-off is clear from the account: plan ahead for the water bath, then sear immediately or as the final cooking stage when you want a browned exterior. The post records one preparation and does not establish how the result changes across cuts, thicknesses or doneness preferences.
