My de Buyer CARBONE PLUS 24cm 5110.24: a first potato pancake without sticking
Reviewed: de Buyer CARBONE PLUS 24cm 5110.24Regional reference: de Buyer CARBONE PLUS 24cm 5110.24 (Europe (UK))
I seasoned my de Buyer CARBONE PLUS 24cm 5110.24 in the oven and cooked my first potato pancake with very little sticking and easy cleanup.
After moving to Germany, I had always wanted to find a safe, uncoated frying pan for my children. We have a Le Creuset cast-iron Dutch oven at home, but I always felt we were missing a pan that was just right for everyday potato pancakes, fried eggs and stir-fried vegetables.
A while ago, I bought the de Buyer 24cm Bratpfanne CARBONE PLUS, and it really is incredibly useful!
Why did I choose it?
• Reasonable price: compared with Lodge, which often costs more than €80 in Germany, de Buyer felt more affordable and offered good value.
• Suitable for cooking for children: it has no coating or chemical nonstick layer, which makes me feel reassured when using it.
• Suitable size: the 24cm single-burner frying pan is just right for everyday frying and stir-frying without wasting space.
A seasoning tip
I do not have a gas stove, so I seasoned it properly in the oven for a more even result. The first time I cooked a potato pancake, it did not stick at all! I only needed a little oil, and the food developed a browned, fragrant surface while still feeling healthy.
Oven seasoning method
- Wash the pan
• Wash the rust-prevention coating from the new pan with hot water and a small amount of dish soap.
• Wipe it dry, then preferably heat it on the stove to evaporate all remaining moisture. - Apply a thin layer of oil
• Use kitchen paper to spread a little high-heat oil, such as flaxseed, grapeseed or rapeseed oil, thinly over the inside and outside.
• The thinner the layer, the better; wipe until the oil is almost invisible. - Heat it in the oven
• Preheat the oven to 200–230°C.
• Put the pan upside down in the oven, with a sheet of baking paper underneath to catch drips.
• Bake it for one hour. - Cool and repeat
• Let the pan cool naturally in the oven.
• Repeat the oiling and baking process two or three times. The surface will gradually become golden-brown or black.
Practical tips for using it
• Always heat the pan: food is more likely to stick when the pan is not hot.
• Do not rush to turn food over: let it set first, then turn it. Potato pancakes and fried eggs are especially easy to cook this way.
• A little oil is enough: this uncoated iron pan retains heat well and heats quickly, so only a small amount of oil is needed for frying and stir-frying.
• Do not use dish soap: after cooking, I brush the pan while it is still slightly warm. With uncoated pans, I have never been afraid to use steel wool when necessary; then I dry the pan and apply a thin layer of oil for maintenance.
My experience using it
I was amazed when I cooked a potato pancake for the first time: it did not stick at all, and the pan was very easy to clean!
I no longer have to worry about the safety of my children's meals. I used my previous Lodge cast-iron pan for 11 years, but unfortunately I did not bring it with me when I moved to Germany. This time, I hope the de Buyer will carry on the tradition and become another heirloom pan that lasts long enough to be passed down.

Models in your region
The owner's pan is identified as the de Buyer CARBONE PLUS 24cm 5110.24, and the UK catalogue lists the same model. That catalogue specifies a 2.5mm steel body, a 1.31kg weight and a riveted strip-steel handle, while limiting oven cooking to 10 minutes at 200°C. The owner's reported 200–230°C, one-hour oven seasoning cycles therefore exceed the manufacturer's stated limit for this version and should not be copied without checking the exact model's care instructions.

What the first use shows
The owner used the de Buyer CARBONE PLUS 24cm 5110.24 for her first potato pancake after oven seasoning and reported no sticking, very little oil and easy cleanup. That is a useful first-use result for this pan and recipe, but it does not establish permanent nonstick performance or predict how every food will behave.
Her practical advice is to preheat the pan, let food set before turning it and use only a small amount of oil. These are her cooking practices and observations, not controlled measurements of heat-up time, heat retention or oil requirements.
The oven-seasoning limit matters
The owner's method used 200–230°C for one hour and repeated the cycle two or three times. The official information for the standard 5110 strip-handle version instead specifies oven cooking for up to 10 minutes at 200°C. Because her process is hotter and much longer, buyers should follow the instructions for their exact version rather than treating her seasoning routine as universal.

The flat handle shown in the owner's photos and the 5110.24 code in her product screenshot identify the standard strip-handle version. CARBONE PLUS pans with stainless tube handles are a separate configuration with different oven instructions.
Size, weight and everyday fit
At 24cm in diameter, the pan matches the owner's choice for a single burner and everyday portions of potato pancakes, eggs and vegetables. The catalogue lists a 17.5cm base, 2.5mm steel thickness and 1.31kg weight; these are manufacturer-listed specifications, not measurements made by the owner.
The owner wanted a pan that fitted everyday frying alongside her existing Dutch oven. Her 11 years with a previous Lodge pan describe that earlier pan; the de Buyer result here comes from its first use.
Cleaning and care choices
The owner cleans the warm pan with a brush, sometimes uses steel wool, dries it and reapplies a thin film of oil. Avoiding detergent and using steel wool are her habits, rather than a manufacturer requirement established here. Her reassurance about cooking for children is a personal view, not a food-safety test.
For buyers, the main trade-off is that an uncoated carbon steel pan requires ongoing drying and oiling rather than the care routine of a conventional coated pan. The owner's first cleanup was easy, but her post-cooking routine remains part of using this type of cookware.
