My Smithey Carbon Steel Wok after two weeks: fast stir-frying, hands-on care

Reviewed: Smithey Carbon Steel WokRegional reference: Smithey Carbon Steel Wok (United States)

I used my Smithey wok for two weeks: it heated quickly and made stir-frying feel faster, but hand-washing and oiling added upkeep.

Hi, I’m Emma!

Some people in the comments on my unboxing post said they wanted to see a review of this wok.

Here’s my conclusion

I really like it! It’s not a miracle tool, but it does improve the flavor and texture of home-cooked food. It’s not for “beginner chefs.”

My honest impressions after using it for these two weeks

🔥 It heats up so quickly! You need to have your ingredients ready, and it cuts the time it takes to stir-fry a dish by a lot. It’s easy to get wok hei.

🩷 It heats very evenly and cools down slowly. Even ingredients taken straight from the fridge don’t burn.

😄 It’s much lighter than I expected. Tossing food one-handed is okay for me.

❌ It’s not for people who don’t want extra hassle: it needs maintenance. I have to hand-wash it and then apply oil.

In summary

It won’t make your cooking skills shoot up, but it will make you look forward to cooking every meal. This hand-forged steel wok, with its bumpy texture, looks like a work of art.

Hope you’ve eaten well today too. That’s all for now.

Smithey identifies the Wok in this account as its hand-forged carbon-steel model. The author’s two-week comments describe the owner’s experience; they do not establish a measured heat profile or a universal one-hand tossing result.

Fast heat rewards preparation

The owner says the wok came up to heat quickly, shortening stir-frying and making wok hei easier to achieve, and stresses having ingredients ready in advance. In a later October 2 reply, the owner said the wok had recently been left unused because they cooked more slowly and sometimes took time to find seasonings. Advance preparation is a practical consideration for cooks with that habit.

Smithey identifies the US Wok as a flat-bottomed carbon-steel pan that works on gas, induction and electric heat. Its current listed top diameter is about 12.6 inches and its formal weight specification is approximately 3.4 lb; those are manufacturer specifications, not measurements of the owner’s wok or proof that every user will find it easy to toss one-handed.

Expect hands-on cleaning and seasoning care

The owner reports hand-washing and oiling the wok after use, a maintenance trade-off alongside the quick cooking they enjoyed. Smithey’s carbon-steel care guidance specifies washing with warm water and dish soap, drying thoroughly—including warming the pan on a burner—and applying a thin coat of oil before storage. The owner’s shorter account does not establish that they followed every step in that guidance.

The owner also describes the wok as heating evenly and cooling slowly, and reports that ingredients taken straight from the refrigerator did not burn. These are personal observations from two weeks of cooking. Smithey’s care guidance says carbon steel heats and cools faster than cast iron; the owner does not identify a comparison pan, so the two statements describe different kinds of evidence.
